I think a soup pot would work just fine. Just make sure you keep the heat down and you stir enough that the beans don't burn to the bottom.

Thanks! Reading all of those food styling and food photo books is starting to pay off! You would love this dish. The epicurious recipe, cut in half, would be the perfect amount for you and Jeffery for dinner, especially with a loaf of crusty bread close by to sop up all the tomato sauce.

Oh! I love quiche. I always make mine with frozen pie crust because I'm too lazy to make my own. Then I bring the leftover to work for lunch.
