That's it - I'm cooking something delicious tonight. Or perhaps you would like to move to NYC and keep me well fed? Nice photo too!
Here are Kevin's dessert recipes: "The lychee sherbet was pretty easy. Essentially, I whizzed up a can of lychees with the can juice along with some 1/2 cup of heavy cream, a bit of sugar (to taste) and a pinch of salt. Then, into the ice cream maker. For the pineapple, I cut them into 1/4" thick rectangles. I put about half a stick of butter into a roasting pan with the seeds of one vanilla pod and let the butter melt on the stove over medium-high heat. When melted, put the pineapple in there and then in the oven at 400F for 50 minutes or so, flipping them over halfway through. For the caramel. Dump 1/2 cup of sugar in a pan over medium heat. Let the sugar melted and start to darken in color. Add a generous splash of rum and a pat of butter at the end and swirl it around to incorporate it. Drizzle over the top of everything. "

We had made it precisely for pulled pork....while in North Carolina. ;) Spicy Barbecue Vinegar sauce: Combine 1 cup cider vinegar, 1/4 cup water, 1 tablespoon brown sugar, 1/2 teaspoon cayenne pepper, 1/4 teaspoon black pepper, and 1/4 teaspoon of red pepper flakes. I remember he had warmed up the apple cider vinegar and the brown sugar to let the sugar melt. To make it into a dressing, just add oil and whisk.
Good point! We've also done this with a spicy vinaigrette, which is a little lighter, but just as good. :) We used an old vinegar based spicy barbecue sauce that Dave had made and turned it into a dressing for the trout salad.
Mmmm....:) This makes me want to go buy some tamarind concentrate and experiment. :) Avocado and shrimp are some of my favorite things together :) Moo
This sounds like such a good detox dinner! I always forget about smoked trout - love this.
And I will be making this this winter. Oh my yes I will! - Liz
