Hi Joanna, so Sicily also makes cardoon fritters like Emilia-Romagna! Here produce in the market is seasonal so it is too late for cardoons now that Spring is nearly here, I will have to wait for November/December to find them again. Which is OK because we still have artichokes and the first asparagus, peas and fava beans are starting to appear!

I don't think you can actually eat the thistle part - we remove the "choke" from artichokes after all. But as Steve has said , the choke can be used to make vegetarian rennet , and has traditionally been used for that purpose in Mediterranean countries.

The classic recipes do not use yoghurt and I do not see that yoghurt contributes anything worthwhile to the original Beatrice, so personally I'd leave the classic recipe alone, BUt everyone has their own ideas!

Depends how long it had been in the fridge beforehand, how warm the environment is . I wouldnt want it to hang about more than 20, maybe 30 minutes all the same, if just beacuse it should be eaten a little cold. Carmelita

The zucchini puree is mixed into the bechamel sauce. You are right Diana, this is not explicitly stated in my recipe, my apologies, though I think you can see from the photos that the two items have been mixed together.

If youre restrained with the gelatin, dont make it too far ahead and remove it from the fridge in good time - say 10-15 minutes if made in the previous few hours, 20 - 30 if made the day before - yours too can be a gently wobby Panna Cotta!!
