Hi Amy! These pops will work with coconut milk as well, the coconut cream is just gives them a little creamier texture. You are right about the rum, you don't want to add too much or else they will not freeze hard, but then I guess you will just have soft serve! These are fantastic without the rum of course, and great for kids.
