your mousse wasnt a bit chalky after it set in the fridge? I had the same problem with my first batch and it seems that stirring in 2/3 of the egg whites helped quite a bit then I was able to fold in the rest, but the texture was pretty thick after it chilled. The second batch that I made when I let the chocolate cool some and let the cold yolk sit a bit and warm up turned out much, much better.

I pushed a couple cloves into my onion halves... shouldn't have cut them into halves... lol and wound up loosing them and pureeing them into the lentils anyways and i really loved how the flavor came out :) But i'm with you! next time, im going to just go ahead and chop the veggies ahead of time but then i would go ahead and puree all the lentils because i loved the texture and pairing of the salmon with the puree instead.
