Hi Stacey, I havent posted the recipes yet. For Monday, I am riffing on a recipe posted in the latest MS Living, blogged by another blogger here: And for amatriciana, it's basically 4-6 ounces of pancetta (diced), one onion sliced, and a couple cloves of smashed garlic sauteed in olive oil (in a frying pan). Then dump in a whole can of whole peeled (San Marzano if you can find them) tomatoes. I snip up the tomatoes with scissors. Let simmer until slightly thickened. Salt and pepper to taste. Toss with hot cooked spaghetti and pass the pecorino romano (or parm)!
