Also, I do believe that food goes through fads and sometimes overkill is what really squashes them. I like cupcakes still but I agree they are not the rage they used to be. Food trucks-well I always thought of them as a stepping stone to having a restaurant and am surprised to learn that people don't want to progress out of the food truck business.
