Streamside, with my cane rod......Or making food, for those I LOVE!
"I'd rather die of thirst, then drink from the cup of mediocrity"
Interests: As far back as I can remember..........I have been fascinated by food....It's smell, taste, texture and color. I have made one of my life's goals, to create/fashion/elaborate the very best of what I eat, and above all what I serve to those I feed. I live for making what people really like to eat, it gives me the greatest of satisfaction , to have someone tell me that something I have made for them, brings them "back"...Yeah baby, that's what I'm talking about.....Cheers, and maybe I can make something you love someday!!!

Flour free, gluten free oat/flax/quinoa and goose berry cookies...Tender, with just a hint of ginger, cinnamon and nutmeg. Made with additive free butter, and local organic eggs..Just what the doctor ordered if you have a penchant for a great cookie... Continue reading

|Today , with a little time on my hands, I decided to use up some dough remnants, and fashion some healthier cinnamon buns... I wanted a featherier, more tender product, like Danish , but without all of that extra sugar. Xylitol, mixed into the dough, imparts the sweetness that I'm... Continue reading

It just occured to me that to get folks to try something, you either have to make it for them, or detail it's manufacturing , so that it is as least intimidating as possible. I have deconstructed the "Pastiera", Easter torte, and have illustrated the assembly steps, to make it... Continue reading

Yesterday was my GF's 48th, and for the occasion she indicated that savory , not sweet, was what the doctor ordered... She indicated that the thicker variety of pizza pie, was her preference. Sensing that the usual Friday nite thin crust, just wouldn't cut it, I set out to fashion... Continue reading

Sometimes there ain't nuthin like a baguette....To make your GF, and mama happy, served with one of these: Some leftover AP flour, became a poolish, yesterday evening, and subsequently a baguette mix, resulting in these babies... Spelt, rye, rye flakes and a kamut starter morphed into some rustic chunks, baked... Continue reading

Nothin says comfort food quite like deep dish apple pie....IMHO. I used a crust that my GF made, spelt/ww and coconut butter, that made for a very tasty piece of how do you do, following the beef stew she also fashioned..... A pair of 90% sour rye "miches", that lend... Continue reading

January. The coldest, bleakest month of the year...In this part of the world. Christmas credit card bills, post Christmas weight loss challenges, snow up to the rooftop, and short dark days with darker, more frigid nights....Made bearable only becaused there's a warm body sleeping next to you sharing in the... It isn't often that I post about something other than food. This will be one of those times. I use this blog to pass on my love and passion for food, baking and all things ingestible...After a very trying week past, with some enormous ups and downs....I found myself in... Continue reading

A very old friend mesaged me just before Christmas...."Anthony, I just bought myself a used stand mixer, and I would like to make some good country style bread.....Do you have a recipe I could use?" "I've been googling all over the place, and I need help". Now, making bread is... Continue reading

Christmas day.....Copious amounts of food, gravies, sauces, stuffings and desserts....It just doesn't seem to end. Throw wine and liqueur into the mix, and the recovery period can't come soon enough! Here are some pics of some Christmas goodies in an English, white bread homestead... Some tourtiere, balsamic sprouts and pan... Continue reading

This torte, is really simple to make, and even easier to ice, if you can pour, you can ice it. I make these using leftover icing, and unused ganache. Any white cake mix will do, if you want to use a ready mix, that's fine. I am submitting a basic... Continue reading

These little doughballs are heavenly , when rolled in cinnamon sugar, or dipped in a simple syrup and honey mixture.....They are very addictive, and 6 is just not enough. I have made them with both regular pastry flour, and WW pastry flour....No perceptible difference. They can even be dipped in... Continue reading

This recipe is one that was provided to me by one of my professors at the CCA. Chef Jacob Ference. Chef Jake, as we called him, was a dry-humored , witty, somewhat biased cake "Divo". He was a master cake maker, and fashioner of all things sweet, moist, buttery and... Continue reading

This is the stretch of my work week that puts me in the office for more hours, than I am at home....Some would call this obsession, some a mania.....Perhaps they would be correct on all counts. I call it just gettin 'er done, to quote a redneck. As we are... Continue reading

I know that Christmas is about family, and Jesus' birth, and getting together with our loved ones....It shouldn't be about work right? I always felt that the sooner the down time arrived, come holiday time....The better. That was before I worked....Here. Perhaps it was the feel of the place, maybe... Continue reading

Yesterday at Lucie's, my co-worker, Emily, who had been lusting after my chocolate crackle cookies....had an epiphany: She loves chocolate, she also adores mint. The perfect coupling of cookie and cream, (mint flavored , cream cheese fillied). Lucie's also offers tasty, scratch-made meals to go, Montreal-style bagels, seasonal baked yummies,... Spelt/rye levain, with rye starter, and some flourless multigrain wild blueberry waffles, to deflower the new waffle maker. The loaves , were made up rustic-style, no shaping, just cut from the dough block. The waffles, a mix of 10 grain cereal mix, and oat bran, buttermilk and eggs... Continue reading

It's always nice to start at a new place, when the direction, from the powers that be, is forward thinking. That being said, the good folks at Crieff hills retreat have turned out to be just that....Not just forward thinking, but visionary. Today, after serving brekky to a few visiting... Continue reading

The term efficient , is one that is oft repeated, yet sadly rarely adhered to, or so I have found out in recent years. It is not always the size of the space, (although this can greatly matter, at times). It isn't the quality of the equipment...I have enjoyed world... Continue reading

There's something about a baguette: Maybe it's the crunchy, caramelized crust....Or the "grigne", the ear that curls back from the baguette, with a dark golden grin...Maybe it's just the tender, chewy interior, that marries itself from cheese to pate to hummus, and beyond..There is just something endearing about the baguette...If... First day at Indulge cafe/bistro....What could I expect?? New kitchen, strange surroundings, out of my comfort zone.....Shudder!
