Streamside, with my cane rod......Or making food, for those I LOVE!
"I'd rather die of thirst, then drink from the cup of mediocrity"
Interests: As far back as I can remember..........I have been fascinated by food....It's smell, taste, texture and color. I have made one of my life's goals, to create/fashion/elaborate the very best of what I eat, and above all what I serve to those I feed. I live for making what people really like to eat, it gives me the greatest of satisfaction , to have someone tell me that something I have made for them, brings them "back"...Yeah baby, that's what I'm talking about.....Cheers, and maybe I can make something you love someday!!!

As a new resident to this part of the world, I see things perhaps a wee bit differently than say, someone that has been here their whole life. I expect to see beauty, rather I look for it....Sometimes it appears in the form of a talent that someone possesses, or... Continue reading

This abundance of flavor, came from here: and here: and near this house, where ANN spent many a summer's day... The lobster is from the Gulf of St Lawrence, the beef from grassfed livestock, and the veg from local farms.. Continue reading

Cheesecake, in our house, is always consumed with 2 forks, forking off of one plate...It's tradition..NY style cheesecake, fresh Nova Scotia strawberries, 3 berry sauce, and some warm pouring ganache...Finished off with a sprinkling of black pepper. Really. Continue reading

Made a little neighborly love today, and then some gluten free, Teff and Sorghum pizza: Diced tomatoes, fresh garlic, fresh basil, sea salt and a little olive oil, and some cracked pepper....Turkey sausage, onion, and some of my soon to be famous smoked cheese blend! Eatin' good in the neighorhood. Continue reading

Recently, after a lot of deliberation and thoughtful consideration, my sweetie and I decided to move to the east coast. After taking a little jaunt in June, the choice became crystal clear: Prince Edward island would be our destination of choice. We both had felt like we'd never put down... Continue reading

Day 29, of my carb cleansing, and I'm a gonna have me a couple pieces of this GF Sorghum/Teff/White bean bread. It's not light and crusty like the Rustique that I have in the oven, as we speak, but more like a rye....Denser, more earthy, more complex and somewhat unidentifiable.... Continue reading

As promised, another dieters dilemma solved, at least for this diabetic....Marlin steaks, seared on the barbie with a side of yellow zucchini, purple onion, and some bell peppers liberally seasoned with what I have trouble getting out of my system: Montreal. Specifically, Montreal steak spice! The Marlin, was given an... Continue reading

I had a moment today, not THAT kind of moment...One that made me appreciate the truly little things in life. I was sitting with my sweetie, down by the Speed river. We were just sitting watching the bubbling , endless flow of the river, and feeling the brisk breeze riffling... Continue reading

Fiftieth anniversaries don't come along every other day...I have been blessed in my family to have had the opportunity to celebrate 2 of them....The latest occured yesterday. This is my mom, yesterday was her 75th birthday. For the event, we (her sister and I) , decided that a little jaunt to her favorite spot in Ontario, might be "de rigeur". Mum is battling a very serious illness, and this sort of trip is something she loves..... I... Continue reading

|Today , with a little time on my hands, I decided to use up some dough remnants, and fashion some healthier cinnamon buns... I wanted a featherier, more tender product, like Danish , but without all of that extra sugar. Xylitol, mixed into the dough, imparts the sweetness that I'm... Continue reading

It just occured to me that to get folks to try something, you either have to make it for them, or detail it's manufacturing , so that it is as least intimidating as possible. I have deconstructed the "Pastiera", Easter torte, and have illustrated the assembly steps, to make it... Continue reading

Yesterday was my GF's 48th, and for the occasion she indicated that savory , not sweet, was what the doctor ordered... She indicated that the thicker variety of pizza pie, was her preference. Sensing that the usual Friday nite thin crust, just wouldn't cut it, I set out to fashion... Continue reading

Sometimes there ain't nuthin like a baguette....To make your GF, and mama happy, served with one of these: Some leftover AP flour, became a poolish, yesterday evening, and subsequently a baguette mix, resulting in these babies... Spelt, rye, rye flakes and a kamut starter morphed into some rustic chunks, baked... Continue reading

Nothin says comfort food quite like deep dish apple pie....IMHO. I used a crust that my GF made, spelt/ww and coconut butter, that made for a very tasty piece of how do you do, following the beef stew she also fashioned..... A pair of 90% sour rye "miches", that lend... Continue reading

Christmas day.....Copious amounts of food, gravies, sauces, stuffings and desserts....It just doesn't seem to end. Throw wine and liqueur into the mix, and the recovery period can't come soon enough! This torte, is really simple to make, and even easier to ice, if you can pour, you can ice it. I make these using leftover icing, and unused ganache. Any white cake mix will do, if you want to use a ready mix, that's fine. I am submitting a basic... Continue reading

These little doughballs are heavenly , when rolled in cinnamon sugar, or dipped in a simple syrup and honey mixture.....They are very addictive, and 6 is just not enough. This recipe is one that was provided to me by one of my professors at the CCA. Chef Jacob Ference. Chef Jake, as we called him, was a dry-humored , witty, somewhat biased cake "Divo". He was a master cake maker, and fashioner of all things sweet, moist, buttery and... Continue reading
