The trick with boilover is to keep a spray bottle of plain cool water next to the stove. As you near boil, watch for the foam. If it starts to foam up, spray it really quickly until it starts to subside.

I'd just rack it *really* carefully. As long as you don't move the racking cane around much, you shouldn't suck up too much pulp. If you think you've gotten too much into secondary, you can always re-rack into a tertiary fermenter/bright tank/whatever.
