Hi Chelsea - if you want to water-bath can this, all you need to do is make sure to fill up the jars to within 1/2 inch of the top and wipe the rim off before you put the lid on. The blog Food in Jars has some great details on water-bath canning. I don't use pectin much because I don't like the rubbery texture it gives to preserves. This is soft and spoonable as it is, but if you like a firmer set you could add pectin to it.
