An update: More eggplant arrived from the CSA Eggplant Gods & I whipped up a batch of this. I made four or five of the balls and then realized a) I was not going to a party and b) I was not going to eat 40 of these myself! So I transferred the rest of the mixture to a pie plate and baked it up into a crust and made a tomato tart, which was amazing enough to recommend that you try it as well!
