Best croissant does not have one single answer, far from it, even when you pretend you would be ready to cross the city for it. But the interesting thing is that almost each good bakery offers croissants that are different and with different appeal: some are lighter than air, some very bready, some buttery, some melty, some creamy (somehow), some crispy, some sweet. "Croissant", it's a bit like a simple theme that every musician interprets his own way, revealing his personality through that anonymous and identical piece... I also believe Barbot and Rohan fully deserve their third star, even if I remain personally unmoved by l'Astrance (again, more extensive review on my blog).

Hi Pim, Hi Robert-Gilles, I join you in congratulating Anne-Sophie Pic in Valence, and I would love to come with you if you eventually make it to her restaurant, as you say. I never went either. I disagree with the Michelin bashing in general (more on my blog on this matter). The guide is not innovative, but it is reliable. I am mostly surprised that Robert-Gilles attributes to the Michelin the death of a fellow Burgundian, who I can only suppose has the name of a bird. If we really want to blame someone, François Simon would be first on line, on the contrary, as it is his "leak" paper who really put Bernard on panic and full depression mode in those gloomy february days.
