ONE GOOD PAN! I recommend the 12" Joyce Chen carbon steel flat-bottom stir fry - with handle and buy a top that will fit on it and a non-spatter cover. I use this ALL the time and I am older and have been cooking many years. I recently gave this to a newly married couple and they have been talking about it ever since. You can get the non-stick model but of course there is debate about the safety of non-stick surfaces and what chemicals they may have that would be unsafe to ingest.
