good luck, kara! we have a "food is not a big deal" attitude with our kid in my house because both my husband and i have struggled with weight issues (thin, heavy, thin, etc.) and i don't want her to have an unhealthy view of eating in one direction or the other. i try to make sure she's exposed to everything but i never make her sit there until she's done or force her to eat something - i do make her try everything at least once. ;) i agree with your sentiment about feeling for the animals but not being quite as impacted as maybe i should be. i've really changed the way we eat and the way i cook since my daughter came along. anyway, i think it's a great idea to try it and i wish you the best of luck!
