Hi Sandy! I first read about Smith Island Cake about 10 years ago, I saw a recipe in a magazine and I clipped the recipe and picture and kept it in my binder. Every now and then I would look at it and want to make it but just didnt have the time. I saw the CBS Sunday Morning show last fall and when I saw the story on Smith Island Cake I dug out my recipe and decided the time was right...of course, it took me another 5 months but thats how I do things these days, with a 5 month delay! All I can tell you is the cake is worth waiting for - its so impressive looking and it tastes every bit as good as it looks! When youve got time to kill, give it a go! Happy Spring!! xo, Nan

I know, sounds like forever to bake, and it will seem like it when your house smells like Heaven/bacon! But it bakes at a low temp so the bacon has a chance to caramelize into and onto the cracker. So yes, 2 hours but it will be worth it! Sent from my iPad

Lorene - you are SO right - the brown sugar one is a definite 5 on the dang meter!! I love the Parmesan cheese and bacon cracker but I made the brown sugar crackers last night and, WOW, they are wonderful!!! We ate them like they were Skittles, practically a handful at a time! The mister walked in the door as they were baking, and when he smelled the bacon, he asked, Are those my favorite crackers? I told him no, but a new version, one he would like even more! He just stared at me and acted like I had just committed a crime - he said, Why cant you leave well enough alone, I like them just the way they are! Well, not only did he eat the new version, he ate his words as well! xo, Nan

Thanks Sandy!! Elsa is as sweet and smart as she is cute - and she had definite opinions about her cake! Shes already thinking about next years birthday cake!!! As is our Max, He turns 9 in April and his latest obsession is Beanie Boos...like Beanie Babies only with huge eyes...I dont know how that is going to work in cake form but I guess Ill have to give it a go! xo, Nan

I was just told another (better???) way to make these is to swap out the Parm with brown sugar...bacon crack. A person should at least give that a try, no? xo, Nan

OMGosh Julie - You may have just raised the bar on bacon!!! I love sugared bacon, so it makes sense to completely caramelize the cracker with brown sugar and bacon...guess I know what Ill be doing this afternoon, right after I pick up another few pounds of bacon! Hi RitaMarie!! Seeing the quilts always inspires me and I usually go home and head straight for my sewing room, anxious to get going on something! I think Ive got the problem licked, closing the lid on my machine did the trick!!! Have you ever heard of something so simple before?!?! I just might get the Valentines quilt I started in 2011 finished in time for Valentines Day this year!! I can now sew a full bobbin before I stop and Ive yet to mutter one swear word so things are looking up!!! Thanks!!! xo, Nan

Hi Rachel - Guess what?!?!? My thread issues have magically disappeared!!! One of my blog friends is married to a guy who sews kites on a Pfaff...he suggested I close the lid on my machine when sewing - to keep my thread from sliding up and down the thread-pole, where he said it might catch. I did and that solved the mystery!!! I was able to sew a FULL-BOBBIN out of thread before I had to stop sewing - MIRACLE!!! Such a simple little thing but no where in the manual or at either of the 2 shops Im surely banned from, did anyone mention closing the lid! I can hardly believe such a little thing could make such a big difference but it did - and thats the only thing different that I did! SEW I am SEWING at a break-neck speed once again!!!
