mmm Maple Chocolate Porter... I've found honey to be tricky to ferment, so I'd guess that you'd only want it as a part of the priming equation. My Belgian Double Fig Ale totally flopped on the fermentation. I failed to stir it properly after adding sugar before bottling! D'oh! Still tasty flat but could be better....
