The buttermilk was absolutely delicious - sweet and creamy. It really did taste like cheesecake. I would have loved to have tried the creamy lemon pop. Was it as amazing as it looks?

I get Mixed Essence from an international market and it costs about $3. I haven't found it on the internet cheaper than $10 (w/ shipping). Mine is a mixture vanilla, almond, pear and anise extracts, but they vary depending on the brand.
It was really interesting. I love making meals out of multiple small plates. The presentation was the best part.

The original recipe also use chiles in adobo in the veggie mix, so you can definitely spice it up.

CupcakeQueen, I appreciate your post. To me, Gigi's cupcakes are just dry. It's not just the amount of frosting (although I do agree with your point that Gigi's allows more if you choose) Muddy's versions are just more texturally appealing to me. Every cupcake I've had from them has always been light and fluffy. And I don't get any kind of cake mix flavor from Muddy's cupcakes. But it is very possible that you've had different experiences than me from these vendors.
