Serve it ice cold the day you make it! 1 cup cottage cheese 2 teaspoons grated onion 1 teaspoon lemon juice 1 clove of garlic 3/4 teaspoon salt 1/8 teaspoon ground pepper 1 large ripe avocado 1 medium ripe tomato In a small bowl beat together cottage cheese, onion, lemon juice, garlic, salt, and pepper with an electric mixer until smooth. Peel and remove pit from avocado; force through a sieve or mash with a fork. Remove skin from tomato and mince fine. Fold avocado and tomato into cottage cheese mixture; blend thoroughly; chill. Tangy and rich...use the sharp cheddar cheese! 2 cups cottage cheese 2 tablespoons grated onion 1 teaspoon celery salt 1/4 teaspoon Worcestershire sauce 2 cups shredded (sharp) cheddar cheese In a small bowl, beat together cottage cheese, onion, celery salt, and Worcestershire sauce until fairly smooth. Gradually add 1 cup of cheddar cheese and beat until smooth. Fold in remaining 1 cup of cheddar cheese. Serve right away or chill...allow to come to room temperature before serving. Serve as a dip with crackers, chips, or vegetables. Yield: 3 cups Continue reading

Sinfully easy...the Devil made you do it! 1 cup cottage cheese 1 (2 1/4oz) can deviled ham 2 tablespoons green onion, chopped fine In a a small mixing bowl, beat together cottage cheese and deviled ham. Stir in onion and mix until smooth. Cover and chill. Serve with crackers, chips, or raw vegetables. Yield: About 1 1/4 cups Continue reading

For salads and things...dress up whatever you like! 1 1/2 cups cottage cheese 1/2 cup prepared French Dressing 1/4 cup crumbled bleu cheese 1 tablespoon prepared horseradish In a small mixing bowl, beat cottage cheese until smooth. Slowly beat in French dressing, bleu cheese, and horseradish. Cover and chill. Use as desired. Yield: 2 cups Continue reading
