Jersey Fresh, as fresh as fresh gets. That's what we do come summer time in the Garden State! This time of year gets us in gear for the Ocean City and Salem, NJ, Farmers Markets. It's intoxicating really, to be surrounded on all sides by the best fresh produce, honey, flowers, eggs and baked goodies the State has to offer. My dear one, Quasie, a Blue Andalusian hen, hence the blue legs, getting her daily bit of pampering. As a small chick she jammed her neck and has been somewhat crooked ever since. I handled her the most, thinking I could massage her neck back into joint, but with no success. However, that regular handling has made us thick as thieves and she stands as the "informant" of the flock, letting me know when the water is low, the coop needs a litter changing and when Roman the Rooster is getting out of hand. We never take quality lightly. That's why we've teamed up with a local gentleman farmer, literally 2 miles from the shop, to supply us with all of our eggs for the production of Gilda's Biscotti. The JWG Smith Farm is home to 600 'Rhode Island Reds' that keep thousands of the most beautiful fresh brown eggs flowing to our bakery. There is no comparison to the freshness of the eggs the 'girls' give me each week and we've included a couple of pictures to prove it. It all started in my small apartment in Haddonfield, NJ, in 1996 after I left my pastry chef position at the Four Seasons Hotel. The absence of an authentic biscotti was obvious to me as the coffee culture started to set its roots into Philadelphia. Opportunity knocked when I met up with the two owners of La Colombe Torrefazione and began making biscotti for their cafe in exchange for free espresso. Since then, our small wholesale bakery has recently relocated to the up and coming city of Salem, NJ and we're still creating the best traditional biscotti by hand, everyday.... Continue reading
