I too am a huge fan of the simple, non-traditional homemade pizza. While mine generally involve some meat and fresh herbs, you can't go wrong with most any interpretation. Also as another alternative to baking, I might suggest giving the grill a try, if you haven't already. I prefer using the charcoal grill with a few chunks of hardwood soaked in water to give the crust a slightly charred and smoky flavor.
