Dear friends, Wow, I was just getting used to writing 2011 and now here we are entering 2012 already. Does that happen to you? I do feel excited about all the possibilities that lie ahead and I also feel proud, and even a little sad, about all that happened this past year being over. It reminds me of watching Lucy grow and feeling that wonder and amazement at all she is becoming, while still sometimes mourning a bit the days that will never come again. We love the fact that music goes hand-in-hand with exercise, and we especially love how dancing is so much for fun ALL ages, big and small. Laurie's two favorite foods are avocado and chocolate... so how lucky were we when Facebook fan Gail Lehman sent us these two recipes COMBINING the delicious duo!? Jenn Cohen's Chocolate Mousse (Vegan, raw, gluten-free) Ingredients: 1/4 cup pitted medjool dates, soaked. 1/4 cup agave nectar 1/2 teaspoon vanilla extract 1-1/2 to 2 avocados, pitted 1/4 cup raw cocoa powder or more to taste 1/4 cup water Place dates, agave necter & vanilla in food processor and process til smooth. Here are some great recipes from our fans that are both sustainable and healthy! Adam Cohen Healthy Strawberry Crisp Ingredients: 2 cups whole wheat pastry flour 1/4 teaspoon salt 2 tablespoons baking powder 1/2 teaspoon cinnamon 1/4 teaspoon all spice 3/4 cup sugar egg substitute for 1 egg 1/2 cup unsweetened apple sauce 1 cup soy milk 20 strawberries 1/4 cup walnuts Directions: Pre-heat oven to 375 degrees. Mix sugar & apple sauce. Add in egg replacer. Add & mix in soy milk. In a separate bowl sift together dry ingredients. Mix wet & dry ingredients together. Fold in strawberries.... Continue reading

Happy Earth Day, everyone! We are thrilled to celebrate our wonderful Earth today (and everyday!) One of the great things about being a kid is all the fun things you can do to help the environment AND have a great time doing it. Here are some fun, Earth-friendly activities: 1) Go for a walk and pick up litter. We had a wonderful time in Providence, RI this past weekend.
