Wow! Sounds interesting! I, too, have discovered the joys of cooking with honey. I often use it when cooking Chinese dishes, and it adds a subtle nuance that is much better than sugar. I'm fascinated by the suggestion of using chili pepper to enhance the flavour of the chocolate. I think I'll try making two batches at Christmas and see which one my guests like best!
