Hello, Cami! Pick your favorites heirlooms! The variety of each of the vegetable types really does not matter—they will work in an organic partnership no matter which variety of each you choose. The broad leaves and creeping vines of the low growing squash shade the ground to keep it cool, moist, and crowd out weeds. The corn grows fast and tall to provide a vertical structure for the beans (legumes) to attach to as it reaches for the sun. The beans in turn actually help feed the corn and squash by converting nitrogen from the atmosphere and depositing in the soil right where the roots of the corn and squash need it. So, enjoy choosing whatever varieties you think you would enjoy most when it comes to harvesting time!
