Hi Kelsey! I just found this post too and would love an update on what is working for you now. I absolutely love these ideas though as they stand.
I have also had motivational issues when trying to sit down and meal plan. I had never thought of just prepping ingredients... so smart.
We are not vegan but really want to improve our diet in general and all of this sounds incredibly healthy and delicious. We just started shopping at Trader Joe's and signed up for our local CSA. Hoping to see some progress soon with our meals.
