The flesh is actually pink or peach colored and it is not suitable for sushi or sashimi. It is excellent cooked in a variety of ways. The back muscle is milder and less oily while the belly is markedly oily and stronger in flavor. Fine grained, tender and of very full flavor. I describe it as the 'Hawaiian salmon', although I think the kamanu (rainbow runner) may already hold this title.
