Lakis, it's not always easy to find solutions to problems through actions. What if you're fired, you are running out of money, you can't pay the bills and your significant other gives up on you? In such situations, thinking positive is soothing, relaxing and, in the long run, you have a clearer mind to deal with difficulties and find solutions - if there are any. And if you can't figure out a solution, at least you can look forward to better days. To me this is very important. It's the essence of happiness.

Oh yes, you're right! In Greece, we're so proud of our pies! I love hortopita and I make it at least once a month. I've never tried coriander, though. I use vlita instead.

I wish I had your power of will to give it up. I've been smoking quite a lot lately and working often from home doesn't help much. Owing to the financial crisis in Greece, the smoking ban isn't respected in bars, restaurants, night clubs or cafes. The owners would rather pay a fine than lose customers - especially in the winter. Of course, this is no excuse. I just need to follow your example and kick off the bad habit.

Oh yes, Anastasia, I have felt the infinite pleasure of doing nothing. In these hard times of financial crisis, I certainly feel blessed to have a well-paid job, but once off work I am in idle mode! I love to sleep for 2-3 hours soon after lunch. This is usually from 4:00 to 6:30 pm. From 6:30 pm to midnight I turn into a coach potato with my laptop on my lap. And then I go back to sleep again. Soon after midnight, I fall asleep as soon as my head hits the pillow! Such a pity that this only happens...infrequently!

As I live on my own I don't usually cook, butI really enjoy cooking for my friends. I like simple and easy recipes like yours. My mom also loves cooking pork kokkinisto for the family on a Sunday. It's a bit different from yours and much more complicated to make but it's delicious! I've been to Chalkidiki many times and really love its beaches. I think the second leg is the best. I love Elies beach most. That's where I spent some of the greatest summer vacations in my life. Your wonderful post reminded me of those holidays which I am not likely ever to forget.

I love fish very much. If I cook it, I choose fish or seafood that you can fry like marida, gavros or calamari because it's easy and quick to make. I never really learned how to cook big fish like lavraki. I have tried to grill it but it was a disaster. It turned out too dry and bland. Your recipe sounds great to me and so very easy.
