I inherited a couple Tamale Pie recipes from my mom (both originally from Gourmet), which sounded tasty, but my go-to chili recipe sounded tastier than the chili in either of those recipes. So I just took my regular chili recipe and added the cornbread topping. I just had black beans around, so used that and added a whole bag of corn, plus a couple squirts of tomato paste to thicken it up. Had a ton of eggs yolks left over from making multiple chiffon pies for the bakeoff last week (recipes to come), so I made some peanut butter ice cream. It was delish. Ingredients: 4 egg yolks 3/4 cup sugar 2 cups heavy cream 1 cup whole milk 1/2 tsp vanilla 1 cup creamy peanut butter Directions: Whisk eggs until color lightens. Then whisk in sugar until blended, and the remaining ingredients. Whisk the peanut butter lightly, but not too much if you want to have chunks of peanut butter.
