I miss Julia's Empanadas in Adams Morgan. It reminded me of home. Growing up we had empanadas with different fillings at most of our celebrated parties. Recently I started making empanadas on my own and I"m a mess when it comes to making dough. I found pre-made empanada rounds from La Saltena - based in Argentina. They have one for baking and one for frying. Both are excellent and taste good. They're in the frozen sections and I'm sure can be found in some of the markets in DC and NoVA. My mom's recipe was ground beef, potatoes, raisins, onions and garlic. I've made ground chicken, turkey and pork. Happy Holiday guys!

Hi guys and Happy Holidays!! I had brussel sprouts on my table for Thanksgiving and my family at them up! I roasted them with some rendered bacon and some of the rendered fat. But to then add apples to it - omg...I have try it! Thanks!
I instantly thought, oh chicken...it's healthier for me. But I agree, I would have no hesitation in doubling the pancetta in the recipe!! I've been on a turkey kick lately, so I'm sure therecipe will translate to turkey just fine! Welcome back from the Beach!

I love Martha's suggestion of parchment paper as it's probably more economical - I'm always looking for the cost alternative. Back in late February, I found these looking for something different. They looked like Tulips! great for Spring! They are pre-creased parchments all ready to go into a muffin tin and be filled with batter. I've always used Buttermilk with Chicken but for whatever reason I never thought to use it with Pork! Oh...Happy Birthday Clay!
Sounds great guys. I luv rhubarb. Question, can I substitute white wine instead of red for the poaching liquid if I'm using Green Rhubard instead?
