It's been a long time! I should have dropped a comment in earlier.
I've been GF for years now. It's not really hard to do, especially nowadays with so many products available, and if everyone in the family will go GF too, it will be easy. If don't have any wheat-based products in the house, she won't feel singled out or slighted, even if other kids have those things.
If you can bake, get yourself a bag of Pamela's Artisan Flour. It's GF, and acts pretty much like regular flour in the way it cooks. You'll find it easy to use. Also, if you decide to try one of the GF cake mixes, it's Pamela's all the way. Same goes for the brownie mixes.
Rice noodles, quinoa noodles, corn noodles--you won't be lacking for noodle choices. They don't cook up the same way, and aren't as sturdy, so experiment a little.
I'm happy for you all that this problem was discovered so early for her. It saves her from decades of illness and pain. Hurray!
New Adventures in Food
Grace announced a few weeks ago that has been having stomach cramps and gas shortly after meals. She thinks she might be lactose intolerant. Himself's first question was "are any of your friends lactose intolerant?" The answer to this was yes. Of course, yes! This is America in the 21st century....
