Hi Elizabeth! This recipe is very timely! My husband, Bill, enjoyed some beets from Central Market recently, and was "oohing and aahing" over how wonderful they were. :) I told him I had no idea how to replicate the recipe--yours sounds very similar to the dish he ate!
