Fried chicken is not made often in my house due to it being FRIED. I do make it once in awhile as my daughter always asks me at least once a year and guess what last night was fried chicken night. I think the memories are the best part.

My 89 year old mother is very set in her ways and only likes the dark meat of chicken. She will really like a new way to fix thigh meat so will attempt this when next I have her over to eat.
I love the white wine in the bottom of the roasting pan. Does the wine change or enhance the flavor of the chicken I wonder. Must try this and find out. Thanks

I recently visited Chang Mai, Thailand and took a cooking course for one day. What an experience! One of the dishes was green curry with small globe eggplant where we made our own curry mix. I make curries quite often, but usually buy the curry paste from Thailand for ease and convenience.
I have never cooked duck breasts but your recipe sounds easy. Living in a remote mountain area of Colorado limits what I can buy in the small town that is an hour away. I use a lot of frozen meats and have a small freezer to eliminate frequent trips to town. Will see if the local grocer has duck breasts and give it a try.

Creating kabobs with different combinations and seasonings to please everyone in the family is quite a concept. Wish I had thought of that when my family was still at home. I may try this with some friends that are picky only have them assemble their own for the grill. Thanks.
