So, I'm really excited to introduce "Foodie Fridays" I absolutely love Cooking, it has always been my passion. And more so I love eating! Foodie Fridays will feature recipes that I have made up, or tips and tricks for cooking. Today, I am introducing a recipe I absolutely love for the cold days in the winter. Its comforting and healthy. It's my Butternut Squash Chili, I came up with this when I was catering for a Commercial shoot, and we had Vegans and Vegetarians, and also meat eaters, so I had to come up with something that would satisfy everyone. So as you guessed it, this was a vegan recipe, but I added meat to this one. If you are a Vegan or Vegetarian, just omit the meat and use Veggie Stock. Download ButternutSquashChili. (If you have trouble Downloading this recipe, let me know. I will send you a copy) I will just go over the ingredients, but to post the entire recipe was too big. So I made it easy to download and print. For this recipe if you use the meat, you really need the extra fat to cook the vegetables in, notice I dont add any oil. But for the Vegan version, you can add Canola Oil. I don't recommend Olive Oil, because it has a low smoke point. Also, with all of my ingredients, I try to get as many Organic veggies as possible, and Organic Grass Fed Beef. I don't have any pictures yet, because I am making this for dinner tonight, so I will post them later on. 1 Butternut Squash 2 Cans Black Beans 2 Cans Dark Red Kidney Beans 2 C. Frozen Corn 1 Can Chipotle Peppers (In Adobe Sauce) 2 Medium Sized White Onions 2 Lbs. Of 80/20 Ground Beef 1 Bundle Of Cilantro 1 16 oz. Can of Diced Tomatoes 1 16 oz. Can of Crushed Tomatoes 1 Pt. Of Beef or Chicken Stock 4 Cloves Of Garlic 3 Leaves of Kale Salt & Pepper to Taste Garnishes: Sour Cream Cilantro Raw White Diced Onion Mexican Blend Cheese I can't wait to make this tonight, I'm so excited! 1) Get Organized- I am so scatter brained, I would work much more efficiently, and get a lot done if I were more organized. 2) Get In Shape- I don't have enough time in the day to do the work I want to do, let alone the work I need to do. I need to find some time in the day to work out. I would feel so much better! 3) Start my Clothing Line (stay tuned to find out the name) 4) Create a Brand for myself 5) Start this Blog (Check!) 6) Go through my closet and donate my clothes 7) Stop neglecting my "Soap Making", I have been so busy it's hard to find the time to do fun crafting (let's see how i juggle my time with starting my Clothing Line?!) 8) Make time for "Creative Time" its hard being creative after working 9 hrs. a day Mon-Fri 9) Save Money, What can I say? It's easy to spend it! 10) Start looking for a bigger apartment. I want to have an entire room dedicated to crafting. My husband might have different plans in mind with his Man Cave. 11) Last but not least! Dedicate my Saturdays to the K'ville Indie Flea. My mom started an independent crafting market last year, and I wasn't there as much as I wanted to be. So I definitely want to take advantage of that time we have together.
