Thanks for your message. I do not use freezer paper for my hexagons. I either use a slightly thicker than regular paper (traditional paper) or a leave in water soluble appliqué paper (relatively new product on the market). For the traditional paper, which does need to be removed I simply loosen/lift the fabric from the paper by running y apliquick tool in between the fabrics and the paper and then I remove the paper completely.

I think a scrappy look would also look good, stoking to one colour way certainly makes choosing the fabrics for each block easy and will make it easier for placement at the end when joining the quilt together.
