Hi Theresa! Thanks so much for your email and for finding my blog! Regarding your buttercream question, I would suggest using a 1:1 ratio to substitute cream cheese for butter. In other words, use only 8 ounces of butter and add 4 ounces of cream cheese (or 6 and 6). You might need to add a bit more cream at the end, just because cream cheese is a bit stiffer than butter, but I doubt you would need to add much. Hope this helps--enjoy the buttercream! Julie
