As Sam said, those are bitter melon. They really are super bitter. Very cool to see the markets in our Oakland Chinatown looking so much like the real thing in China.
I wonder if this method would work for flour? Down south you can buy jars of dry roux, which is basically toasted flour.

Must try. I love parsnips. Marcus Samuelson did a recipe on Martha yesterday that called for Parsley roots, but parsnips could be substituted for this very hard to find item.
