I started eating vegetarian about a year ago and often was frustrated that in Everyday Food, "vegetarian" seemed to mean pasta or side dish. But I have been pleased to see lately that they are listing a whole "Vegetarian Main" in the index, yea! I recently made the Mushroom and Black Bean Tortilla Casserole (Jan/Feb 2001, page 81) and it was a big hit, I will be making again this week.
