Butter ... My wife thinks it is going to cause her to have a heart attack! She will not even buy it. She gets the yogurt based substitute which I detest cooking with. This interesting recipe calls for a "generous" portion of butter. Her answer is to substitute olive oil. What do you think? Getting back to butter, my view is that, as anything else, it you use it in moderation, it will not kill you.
