Sorry for the pork chop fail. My best have been from the One Pot but I always use thin chops, brown them first, and season heavily before browning. Sweetie, you need a Dutch oven! I bought a gorgeous red one at Costco for like $79 I think. Lodge makes a cheaper one but I prefer Costco's because the sides are higher to keep splatters to a minimum. It has a white ceramic interior and it's cast iron so it's specifically designed to handle the heat of the stove top yet you can stick it in the oven too. It is my go-to pot when I'm browning anything (and not using the counter top pressure cooker). By day, it lives in the oven because it's really heavy and it does take up space, but I love starting a dish in it, then putting the lid on and popping it in the oven to finish. The lid is heavy enough to keep the steam inside too. Google "Costco Dutch Oven" and you can see it. It's one of my fave pans!
