I'm trying this! I've been meaning to make sandwich bread and not just bagels all the time. Looks delicious. ps. I've never bought buttermilk (mostly due to laziness), I just let regular milk sit with a tablespoon or two of vinegar for a few minutes.

hmm I wonder how it would turn out if you made a fruit compote instead of using jam so there's less sugar? A winter version might be nice with cranberry/candied citrus peel throughout... Looks like you could do a lot with this recipe, happy experimenting!

Usually I keep bananas in the freezer just for banana bread but I don't have any today. (sad face) I'll just have to keep this recipe in mind for next time!

Nope I think I just stuck it in the fridge for half an hour. If they spread a whole bunch it might be because of an oven that runs hot.

I made these last year and was just thinking of making them again! You read my mind. I also spent forever going through the comments on smitten kitchen's original post and fretting over them, and sure enough they turned out not quite as perfect as I would have liked, but still intact and delicious. Maybe I'll throw a bit of molasses in next time.

p.s. I wonder if powdered sugar carmelizes faster than granulated, my one attempt at caramel took forever, especially when I added the cream!
